Filled hash browns with spinach and mushrooms

Filled hash browns. I thought it was a nice change with the potatoes last year. And I still enjoy this recipe ever since. Together with a salad or stir-fry vegetable mix and your dinner is ready to go.


Ingredients hashbrowns:
⁃ 500 g (1.1 pounds) potatoes (the ones you use to fry)
⁃ 1 large onion, finely chopped (really thin)
⁃ 3 tbsp fresh parsley, finely chopped
⁃ 1-2 tbsp salt
⁃ 1-2 tbsp pepper
⁃ oil, to fry (rapeseed, olive, coconut, linseed)

Ingredients filling hashbrowns:
⁃ 2 garlic gloves, finely chopped
⁃ 250 g (1 cup + 1/3 cup) chestnut mushrooms, cut in thin slices
⁃ 450 g (2 cups) frozen spinach, defrosted

Ingredients side salad:
⁃ 300 g (4 cups) mixed salad
⁃ 150 (1 cup) finely shredded or julienned (bought or spiralized) carrots
⁃ 2 cucumbers, chopped
⁃ 250 g (1 cup + 2/3 cup) cherry tomatoes, cut into four
⁃ 2 ripe avocado’s, chopped
⁃ handful basil, chopped
⁃ 2 tbsp vinegar or lemon juice
⁃ 1 tbsp maple syrup (optional)
⁃ olive oil, to taste
⁃ salt&pepper, to taste

Serves: 2-4 persons
Extra needed: 2 frying pans, rasp, 2 bowls

Directions:
Take a frying pan, add oil and add the garlic. Bake for 2-4 minutes on medium heat. Add the mushrooms and bake until golden brown. Lastly add the spinach. Mix for another 2-4 minutes and set aside. Take a bowl and rasp the potatoes. Add the chopped onion, parsley and salt and pepper. Mix together with 2-3 tablespoons of oil. Make small circles on a baking plate, cutting board or clean kitchen counter. Press down firmly with a big spoon or just use your hands. Make them about 0.5 cm thick. Take another frying pan, add 1-2 tablespoons of oil and put on high heat. Add a few hash browns and add a little bit of the hash browns filling on top. Reduce the heat to medium and bake for 5 minutes. Take another hash browns and place on top of the other in the frying pan. Flip the hash browns with a big spatula. Bake again for 5 minutes until both sides are golden brown. Meanwhile mix all the ingredients for the side salade in a clean bowl. Add some oil and salt&pepper to taste.Remove the hash browns from the pan and place on a plate with kitchen paper. Set the plates, add the hash browns and add the side salad.
