Coconut – chocolate bars

Credits to Rawsome Vegan Baking all the way, amazing cooking book. Need to try so much more!

I added the chocolate. Because, why not🍫?


Ingredients: IMG_0057
⁃ 170 g (2 cups) unsweetened shredded coconut
⁃ 20 ml (1 heaping tbsp) coconut oil, melted
⁃ 2 to 4 tbsp preferred liquid sweetener
⁃ 1 90% chocolat bar

Extra needed: foodprocessor, baking paper, baking tin, saucepan, heatproof bowl

Directions:
Put 85 g (1 cup) of the coconut into your food processor and blend until this oil begins to come out and the coconut becomes more like a chunky butter; this may take several minutes. Add the rest of the ingredients and process until fully combined. Press into the bottom of apartment paper-lined pan and put in the fridge for an hour, or until set.
Take a sauce pan, add water and wait until it’s boiling. Chop the chocolate into little pieces and place the chocolate in a heatproof bowl over the pan of simmering water. (melt au bain marie). When melted, pour over the coconut mixture. Put in the fridge for another 30-60 minutes. When set, slice and enjoy! These bars can be stored for up to a week in the fridge.
