6x tosti anders (grilled sandwich)

Bread is a prrrrretty normal thing to eat here in the Netherlands for lunch. And breakfast. But just plain peanut butter or jam, cheese or avocado..I’m sure you’ll get bored by it after a while. Since reusing my iron grill, I have become quite addicted to grilled sandwiches. I have tried a few combinations and see here my shortlist with my favourites. What is your favourite sandwich topping 🥪?


 Strawberry – cream cheese sandwich

Ingredients:
– 2 slices of bread
– 4-6 strawberries, thinly sliced
– 1 small serving of 90% dark chocolate (5 grams)
– vegan cream cheese (I always use Tofu

extra needed: cutting board, knife, sandwich iron or grill pan
serves: 1 person

Instructions:
Heat the sandwich iron (or grill pan).
Spread a thin layer of cream cheese on both slices of bread.
Add the thinly sliced strawberries, both slices.
Crunch the dark chocolate and sprinkle on top of the strawberries.
Put the two sandwiches slices on top of each other and place between the sandwich iron.
Grill until golden brown.


Cheese – smoked carrot sandwich

Ingredients:
– 2 slices of bread
– 2 slices of vegan cheese (I always use Wilhemsburger
– 1 carrot, thinly peeled
– 1 tbsp liquid smoke
– 1 tsp soy sauce
– 1 tsp oil
– pinch of salt

extra needed: frying pan, cutting board, knife, peeler, sandwich iron or grill pan, measuring spoons
serves: 1 person

Instructions:
Heat a frying pan over medium heat.
Add 1 teaspoon of oil.
Add the thinly peeled carrot and cook for 2-3 minutes.
Add the liquid smoke, soy sauce and salt and cook for another minute.
Remove from heat and set aside.
Heat the sandwich iron (or grill pan).
Take the 2 slices of bread and TOP with both sides with cheese. Add the carrot mixture.
Put the two sandwiches slices on TOP of each other and place between the sandwich iron.
Grill until golden brown.


Spinach – avocado – pesto sandwich

Ingredients:
– 2 slices of bread
– 1 avocado, thinly sliced
– 1 handfuls baby spinach, washed
– pesto
– sambal
– salt & pepper, to taste

extra needed: cutting board, knifes, sandwich iron or grill pan
serves: 1 person

Instructions:
Heat the sandwich grill (or grill pan).
Spread a thin layer of pesto on both slices of bread.
At a little bit of sambal.
Add the thinly sliced avocado.
Top with salt & pepper.
Lastly, add the baby spinach and put the two sandwich slices on top of each other.
Place between the sandwich iron and grill until golden brown.


Mushroom – onions sandwich

Ingredients:
– 2 slices of bread
– 1/2 onion, thinly sliced into half circles
– 75 g (1 cup) chestnut mushrooms, thinly sliced
– cream cheese
– 2 tsp oil
– salt & pepper, to taste

extra needed: frying pan, cutting board, knifes, sandwich iron or grill pan
serves: 1 person

Instructions:
Heat a frying pan over medium-high heat.
Add 1 teaspoon of oil.
Add the onions and cook until softened for about 15-20 minutes.
Watch closely, reduce heat to medium-low if the onions start to burn.
After 15-20 minutes, add another teaspoon of oil and add the chestnut mushrooms.
Cook for another 5-10 minutes.
Bring to taste with salt & pepper, remove from heat and set aside.
Heat the sandwich iron (or grill pan).
Spread a thin layer of cream cheese on both slices of bread.
Add the mushroom mixture.
Put the two sandwiches slices on top of each other and place between the sandwich iron.
Grill until golden brown.


Banana – peanut butter – jam – coconut sandwich

Ingredients:
– 2 slices of bread
– 1 small banana, thinly sliced
– peanutbutter
– jam
– 1/2 tbsp shredded coconut

extra needed: cutting board, knife, sandwich iron or grill pan, spoons
serves: 1 person

Instructions:
Heat the sandwich iron (or grill pan).
Spread a thin layer of peanut butter on 1 slice of bread.
Spread a thin layer of jam on the other slice of bread
Add the thinly sliced banana, both slices.
Take 1/2 tablespoon of shredded coconut and divide over the banana.
Put the two sandwiches slices on top of each other and place between the sandwich iron.
Grill until golden brown.


Blueberry – almond sandwich

Ingredients:
– 2 slices of bread
– 1 handful blueberries, washed
– almond butter

extra needed: knife, sandwich iron or grill pan
serves: 1 person

Instructions:
Heat the sandwich iron (or grill pan).
Spread a thin layer of almond butter on both slices of bread.
Add the blueberries, both slices.
Put the two sandwiches slices on top of each other and place between the sandwich iron.
Grill until golden brown.
