Salty caramel fudge..do I need to write down more? From time to time you have to still that hunger for the delicious things that can be found in life. And these peanut butter fudgie-fudges do the trick. Snack attack? Eat this. Just mix ‘n match a few of your everyday kitchen cupboard ingredients. And missing a few ingredients in your kitchen? – 1/2 cup caramel sauce (recipe here)
– 125 g (1/2 cup) peanut butter
– 59 g (1/2 cup) cocoa powder
– 105 g (1/2 cup) coconut oil, melted
– 92 g (1/4 cup) ahorn syrup
– 1/2 tsp vanilla extract
– pinch of salt + extra sea salt to decorate the fudge
extra needed: blender or food processor, measuring cups&spoons, baking paper, containers, spatula, knife
serves: multiple portions
Mix the peanut butter, coconut oil and ahorn syrup together in a high speed blender or food processor.
Add the cocoa powder, vanilla extract and pinch of salt.
Pour the mixture into a small container lined with baking paper (the smaller the container, the thicker the fudge cubes become).
Spread into an even layer and pop into the fridge for at least one hour.
In the meantime you can make the caramel sauce. Make sure the fudge sets completely before adding the caramel sauce.
Pour the caramel sauce on top off the fudge, spread to cover and sprinkle with sea salt.
Let it set for another 30-60 minutes before cutting into small cubes.
Store in an airtight container in the fridge up to two weeks.
