Oatmeal breakfast pizza’s

Sunday, or any other day that calls for a lazy day, are the days where I like to experiment a little in the kitchen. Right after my morning run, or before training/a good workout. And where I love a good bowl of yoghurt filled with muesli or delicious banana pancakes. Mixing a batter for these easy ‘pizza’s’ within minutes and then poppin’ them into the oven while either taking a quick shower or getting ready to head out..I love it. I found this recipe by a while ago, while looking for new recipe inspiration. I just veganised it and now I’ve been making these for the past few days 🙃. Oh, and you can easily make oat flour by just crushing rolled oats for a few minutes in either a food processor or coffee grinder. Let me know what you think, drop a comment below. Enjoy! 

oatmeal breakfast pizza's

– 75 g oat flour
– 25 g almond flour
– 100 g coconut yoghurt
– 1 big banana
– 3 tbsps water
– 1 tbsp flaxseed
– 1 tbs maple syrup
– 1 tsp cinnamon
– 1/2 tsp baking powder

extra needed: mixing bowl, whisk, measuring cups&spoons, baking tray, baking paper
serves: 4 small or 1 big pizza

Preheat the oven to 180℃/356℉.
Mix the flaxseed together with the water, set aside.
Mix the oat flour together with the almond flour, cinnamon and baking powder. Mix well.
Add the coconut yogurt, maple syrup & flaxseed mixture. Stir once more until it becomes a smooth batter.
Take a baking tray, cover with baking paper and add the batter.
Decide if you want to make 2-4 pizza’s. If making multiple, make sure the pizza’s don’t touch.
Use a spoon to spread even if necessary.
Place into the oven and bake 15-20 minutes until golden brown.
Once done, choose whatever topping you prefer.
I added a little almond butter and peanut butter, added a bit more coconut yoghurt and topped off with seasonal fruits. Enjoy!
