So sweet potato is a good basis for many recipes. In recent years I have extensively experimented with this type of tuber. And so far it’s been a fun and pleasant food journey. You can steam the sweet potato, roast, wok, fill, bake pies or even eat as breakfast. And mixing sweet potato with cocoa turnt out to be a great combo for a delicious brownie recipe. Yes, another one to add to the list for your Sunday afternoon – baking days. Enjoy, bake away 🎂.
– 2 medium sweet potatoes, pre steamed
– 2 big bananas
– 150 grams (2/3 cup) coconut sugar
– 130 grams (1 1/2 cup) oat flour
– 120 ml (1/2 cup) oat milk
– 8 tbsps cacao powder
– 5 tbsps sunflower seeds
– 1 tbsp cinnamon
– 2 tsp baking powder
extra needed: oven, brownie tin, food processor, measuring cups&spoons
serves: +/- 12 pieces
Preheat the oven to 180℃/350℉.
Grind the sugar and sunflower seeds in a strong food processor.
Add the sweet potatoes, bananas, oat flour, oat milk, cacao powder, cinnamon and baking powder.
Mix until it becomes a thick batter.
Pour into a small brownie tin that’s been rubbed with butter or is covered in baking paper (21,5×10 cm).
Bake for 40-45 minutes. Use a toothpick to see if the brownie is done, it should come out clean. Otherwise cover up the top and bake for another 7-15 minutes.
Let cool down for at least 30 minutes.
Store in a airtight container in the refrigerator for 5-7 days.
